Chicken and Rice
1 pkg Lipton Rice and Herbs
1 can Navy Beans, undrained
1 can Rotel Tomatoes
1 large can chunk chicken, undrained
1 cup water

In a large microwaveable casserole dish pour in the rice mix, then the rotel tomatoes, then the navy beans, and finally the chunk chicken. Add 1 cup of water and stir to blend. Microwave uncovered for 14 minutes. Stir and cover. Let sit for 10 minutes. Serve hot. Season to taste.

Chicken and Dumplings

Chicken and Dumplings

1 Rotisserie chicken, shredded
1/2 bag McKenzie's Frozen Seasoning blend
1 32 oz. carton chicken broth
2 small cans mushrooms buttons and stems, drained
2 tbsp. olive oil
1 tsp. rubbed sage
1 tsp. rosemary
1 tbsp. parsley
1/4 tsp. pepper
6 frozen biscuits, cut in quarters

Cut the biscuits into quarters and set aside. In Dutch oven pour the olive oil and add the seasoning blend. Add the sage, rosemary, parsley and pepper and cook till the vegetables are tender. Add the shredded chicken and stir thoroughly to blend. Add the chicken broth and mushrooms and bring to a boil. Place the biscuits on top and cover, simmer for 10 minutes or until toothpick comes out clean when inserted.

Serves 6 to 8

Polish Sausage and Kraut

Polish Sausage and Kraut

1 pkg. Polish Sausage
3 new potatoes, diced
1/2 pkg. McKenzie's Frozen Seasoning blend
1 large jar sauerkraut
2 tbsp. canola oil
1/4 tsp. pepper


In a large skillet fry the diced potatoes, pepper and seasoning blend in canola oil. Slice the Polish sausage into 1/4 inch pieces and add to skillet. Drain the sauerkraut and add to the skillet. Let cook till heated, about 5 minutes and serve.

Serves 4

Garlic Bread with Artichoke/Spinach Spread
For the Spread you will need:
1 can artichoke hearts, drained
1 can spinach, drained
1 cup feta cheese crumbles
1/4 cup grated Parmesan cheese
2 tbsp. Italian dressing

You will also need:
2 loaves of french bread, sliced lengthwise.
Butter
Garlic salt.


In a food processor blend all the ingredients for the spread. Prepare the garlic bread. Spread the Artichoke/Spinach spread on top. Sprinkle a little more Parmesan cheese on top. Bake at 350 degrees for about 10 minutes. Serve warm.

You can also spread this on foccacia bread.
